In this Instant mor kuzhambu recipe, we are not soaking anything. We can make this Mor kuzhambu in just 20 minutes.

This is a typical South Indian hotel-style mor kuzhambu recipe. We add onions to this, which we usually don’t add in mor kuzhambu. We add besan | kadalai maavu along with coconut, cumin seeds, and green chilis to make the paste. The besan gives thickness to the gravy.

Ingredients

1 and 1/2 cup buttermilk3 tsp oil½ tsp mustard seeds2 red chilisCurry leavesSalt as needed1 thinly sliced onions½ tsp turmeric powder

To Grind

3 green chilis1 tsp cumin seeds1 tbsp besan | kadalaimaavu3 tbsp coconut½ cup water

Instructions

In a mixie jar add 3 green chilis, coconut, 1 tsp cumin seeds, 1 tbsp besan and ½ cup water.
Grind this into a smooth paste.
In a pan add oil and add mustard seeds, curry leaves and broken red chilis.
Once the mustard splutters add the thinly sliced onions.
Cook till it becomes translucent.
Now add the ground paste.
Let this cook for 2- 3 minutes.
You can add ½ more cup of water at this stage if necessary.
Now add the 1.5 cups of buttermilk to this. Let the buttermilk be medium thick and not too watery.
Add turmeric powder and salt.
Mix well and cook in a medium flame.
Let this froth up and come to one boil.
Switch off the flame.
Instant mor kuzhambu is ready.
Serve with hot rice.

Notes

1. We are not adding any veggies to the mor kuzhambu, if needed you can add roasted ladies finger.
2. Do not add the besan | kadalai maavu more than the quantity mentioned.
3. Instant mor kuzhambu pairs well with any spicy curry of your choice.

How to make Instant Mor kuzhambu
