Chocolate Crunch Raspberry Waffles

A big part of the holiday celebration might be Christmas dinner, but Christmas morning is when the magic really starts. And, what better way to make Christmas even more magical than to serve a special Christmas day breakfast! Although cinnamon rolls seem to be the popular choice, I’d like you to make a new holiday memory this year with these delicious, light and fluffy Christmas Waffles.

Breakfast is the most important meal of the day. But that doesn’t mean that it can’t be fun, too!

In your breakfast hides the energy you need to get through most of your day. This is why great emphasis is laid on not skipping breakfast. But does the want of energy leave your breakfast wanting of good taste?

Waffles are a great way to start your day. They are delicious and have the ability to lift your mood even when you feel like you’ve woken up on the wrong side of the bed. Where good flavour inevitably rules, I have a slight inclination towards texture too. For me, a good waffle is crunchy on the outside but light and airy when you take a bite.

If you have been hoping to make some delicious waffles, then this easy Chocolate Crunch Raspberry Waffles recipe will surely delight you!

Half the happiness of making great waffles lies in colourful and tempting toppings which make them visually appealing too. I experiment a lot with my toppings but my favourite are chocolate chips and raspberries. I love seeing the chocolate chips gently melt in the warmth of freshly-made waffles.

I tend to keep a stash of frozen raspberries in the fridge {to save myself too many trips to the supermarket} to add flavour and nutrition to the waffles. But there’s nothing quite like garnishing with fresh raspberries when serving!

This recipe will make waffles that are not too sweet, leaving enough room for you to add sweet toppings of your choice. It will make 6 to 8 waffles according to the size of your waffle iron.

Ingredients:

Butter ~ 5 tablespoons
All-purpose flour ~ 1 cup and 2 tablespoons
Sugar ~ ¼ cup
Baking powder ~ ½ teaspoon
Salt ~ ½ teaspoon
Unsweetened cocoa powder ~ ¼ cup
Milk ~ 1 cup
Eggs {beaten} ~ 2
Vanilla ~ 1 teaspoon

Toppings: You can choose from a wide range of toppings to enhance the flavour of the waffles according to your preferences. For this recipe, I have picked the following ingredients as topping ~

Fresh raspberries
Chocolate chips {optional}
Powdered sugar

Directions:

Step 1: Begin by preheating your waffle iron. If you are new to it then take help from the manual provided and follow the instructions carefully. I spray my waffle iron with non-stick cooking spray before pouring the batter in, and use the highest heat setting.

Step 2: To start on the batter, add butter to a microwave safe bowl and melt it. Allow it to cool.

Step 3: While the butter cools, take a medium-sized bowl and add all the dry ingredients. Mix together till they combine and let stand for 5 minutes.

Step 4: Add the milk and eggs to the dry mixture and pour in the vanilla. Whisk all of the ingredients.

Step 5: Mix in the butter to this batter till the batter gains a smooth texture.

Step 6: Use a cup or a serving spoon to pour the batter in the waffle iron. The user manual comes handy here to find out how much batter your waffle iron can hold. I use half a cup of batter per waffle. I let the waffles sit a minute longer in the iron after the timer goes off, as it helps me gain the texture I prefer.

Step 7: Take the waffles out on a plate and top them according to your preference. A sprinkle of powdered sugar, chocolate chips and raspberries make mine just the way I like it.

Step 8: You will find the waffles to be slightly soft when you first take them out of the iron, but the air will turn them crispy as they begin to cool.

The delicious flavour of these Chocolate Crunch Raspberry Waffles will tease your appetite and help you enjoy the first meal of Christmas day. I truly enjoy making them and if you decide to try this recipe, then let me know how it turns out.
